Absinthe:
As you can imagine, the primary drink served here is Absinthe. In fact, the Absinthe Frappe was invented here in 1874. There is an entire menu dedicated to the various versions of Absinthe. For those who have not tried Absinthe, it has a very strong black licorice flavor. The different versions of Absinthe have a lot to do with the flowers used in the distilling process. Some temper the black licorice taste a little, but it is still strong. All of the Absinthe drinks on the menu are straight Absinthe poured over a flaming cube of sugar, which sweetens the drink and creates a spectacle to enjoy. While I am not a fan of the flavor, watching them make the drink was definitely worth it!
Ramos Gin Fizz:
This is an elaborate drink that few places serve, simply because it is a pain to make. It requires egg whites which are essentially cooked by chemistry in the concoction, the alcohol and sugar specifically. The drink is creamy and smooth, well worth the price even though your bartender may disagree with your order!
